Award-winning bakery Jinju Patisserie, which closed six months ago, is set to reopen in a new location in Portland. The owners, Jin Caldwell and Kyurim “Q” Lee, have found a space just blocks from their original shop. The new Jinju 2.0 aims to launch in early October, coinciding with the holiday season.
- Jinju Patisserie, recognized as America’s most outstanding bakery at the 2025 James Beard Awards, closed its previous North Williams Avenue location due to lease renewal decisions.
- The owners explored various locations in Portland before settling on a former coffee shop space within the Carbon 12 building. This building is notable for being the tallest mass timber structure in the United States upon its 2018 completion.
- The new bakery will be situated at 3494 N. Williams Ave., a familiar area for Caldwell and Lee, who had considered this building when they first moved to Portland.
- Following their closure, Caldwell and Lee took time off, including a trip to Japan and Korea, for personal reflection and to gather inspiration from bakeries abroad.
- They expressed eagerness to reconnect with their customer base, anticipating many familiar faces at the new establishment.
